Vegetable Oil Chemistry - An Understanding of This Understanding of Oil Chemistry For Healthy EatingThe vegetable oil chemistry is an extremely important subject for food preparation. It is used for everything from frying food to making salad dressings. If you want to eat the healthiest meals possible, it's necessary to understand how this substance is made. The vegetable oil or fat consists of molecules containing ethyl or another fatty acid. It can be obtained by reacting vegetable oils with other acids. In this process, some short-chain fatty acids are also produced. Some of the fats are liquid at room temperature, while others are solid at room temperature. The liquids are sometimes called solids.Different types of vegetable oils are available to help with the production of the oil. Some of the types include: cold pressed, extra virgin, vegetable juice, and light, vegetable lard. Cold pressed is the most popular and readily available oil, which is also the cheapest. Some chemicals are needed to make vegetable oil. Some of the chemicals include polyunsaturated or monounsaturated fatty acids. These fatty acids must come together in such a way that they increase the amount of energy in the vegetable oil. When the energy content is increased, the vegetable oil is said to be 'virgin.'Olive oil, for example, is also one of the most famous, popular and most commonly consumed vegetable oils because it is the best selling oil. It is a pure vegetable oil. Olive oil is the only commercially produced vegetable oil that has a high concentration of total fatty acids (FAs). The value of total FAs is greater than that of the saturated fatty acids. One advantage of olive oil is that it will not oxidize or become rancid easily. Olive oil is highly regarded because it will not have that unpleasant aftertaste and will retain its quality long after cooking. Another advantage is that it will not oxidize even if left out on the counter or on the windowsill. The amount of the mineral vitamin E in the vegetable oil is also important. There are many manufacturers who make good products out of oils containing vitamin E. Vitamin E is important because it prevents vitamin A and C from oxidation and prevents the formation of free radicals. This means that when there is a lack of vitamin E, there is a loss of antioxidant defense and a compromised immune system.
